I haven't updated this blog for a couple of weeks now! I was on vacation :). I did nothing but eat, sleep, relax, watch tv, shop, and have fun! Exactly what a vacation should be.
Whelp, I went over my budget this week :(. I spent a total of $44, with $9 being non grocery items (paper towels and baby wipes) so $35 total on groceries. That's really not too far off the mark though. Here is what we did:
We exchanged 3 Christmas gifts at Walmart for store credit-- $60! We used that money on groceries--stocked up on meats--pot roast, chicken, beef, etc.. We also had $10 in walmart gift cards from the holiday season. $70 of credit and a cart full of groceries, and we walked out of there spending $15 out of pocket!
Next I went to Kroger to get the remaining groceries-- I spent $30. ($9 on non grocery items~) I also picked up 2 free toothbrushes and 1 free floss using coupons- yay!
and bonus--we will not have to buy meat next week! This will cut down on our grocery bill and maybe even allow some room to stock up on any other good deals.
This is our meal plan for the week:
Breakfast: Cereal, Muffins, Toast with Peanut Butter
Lunch: Hot Dogs (I only buy Applegate natural hot dogs, and there are almost always coupons available for them!), Leftovers
Dinner:
Pumpkin, White Bean, and Sausage Stew---- butternut squash instead of pumpkin, no bay leaf
Zucchini, Black Bean, and Rice Skillet--- add sausage, no green pepper, add peas + carrots, no tomatoes
Sweet Potato and Black Bean Empanadas---use premade pie crust from freezer, no green onion or cilantro
Crockpot Chicken Tacos----yum!
Perfectly Easy Pancakes--- easy and delicious!
Coconut Chicken with Sweet Chili Sauce---one of our favs!
Parmesan Crusted Chicken---another favorite!
All in all we did pretty well, but were unable to keep to the budget. We'll see how next week goes!
